PARATHAS WITH SPICY MINCE FILLING

Preparation Method :

  • Sift flours into bowl, rub in ghee (or process flours and ghee until mixture resembles coarse breadcrumbs).
  • Add enough water to make ingredients cling together (or process until ingredients jus come together).
  • Knead on lightly floured surface about 5 minutes or until smooth.
  • Divide dough into 16 portions, roll into 14 cm rounds.
  • Spread spicy mince filling over half the rounds, brush edges with water, top with remaining rounds, press edges together to seal.
  • Using a rolling pin gently roll rounds to 15cm diameter.
  • Shallow-fry rounds in hot ghee until browned and heated through; drain or absorbent paper.
  • Serve parathas with cucumber yogurt.

Spicy Mince Filling:

  • Boil, steam or microwave potatoes until tender; drain rinse under cold water, drain. Mast potatoes, stir in yogurt.
  • Heat oil in pan, add onion and garlic cook, stirring, until onion is soft.
  • Add spices, cook, stirring, about 3 minutes or until fragrant.
  • Add mince, cook, stirring until well browned; stir in juice; cool. Combine potato mixture and mince mixture in bowl; mix well.

Cucumber Yogurt:

  • Cut cucumbers in half lengthways. Scoop out seeds, chop cucumber.
  • Combine cucumbers with yogurt and herbs in bowl; mix well. 

INGREDIENTS

  • 250 grams whole meal plain flour
  • 75 grams white plain flour
  • 50 grams ghee
  • 150 ml water, approximately ghee for shallow-frying

Spicy Mince Filling

  • 500 grams old potatoes, peeled, chopped
  • 2 tablespoons plain yogurt
  • 1 tablespoon peanut oil
  • 150 grams onion, finely chopped
  • 1 clove garlic, crushed
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 tablespoon mild curry powder
  • ½ teaspoon garam masala
  • 250 grams minced pork and veal
  • 1 teaspoon lemon juice

Cucumber Yogurt

  • 500 grams green cucumbers
  • 500 ml plain yogurt
  • 1 tablespoon chopped fresh coriander
  • 1 tablespoon chopped fresh mint
