Preparation Method :
- Whisk together the eggs, chives and 1 tablespoon of water. Season well.
- Melt the low-fat spread in a small non-stick pan. Pour the egg mixture into the pan.
- Gently draw the mixture into the middle of the pan. When the omelette is nearly set, spoon the vegetables, cheese with salt and pepper. Continue to cook for 20-30 seconds.
- Fold the omelette in half, remove from the heat and serve.

- 50 grams potato, peeled, cooked and grated
- 1 tablespoon chopped fresh chives
- 1 teaspoon low-fat spread
- 50 grams onion, chopped finely
