Preparation Method :
- Pour in lightly beaten egg and a little milk into the flour and beat mixture, gradually incorporating milk to make a smooth batter using a wooden spoon.
- Beat in remaining milk and half of the butter. Cover and allow to stand for about half an hour.
- Pat dry the grated potatoes firmly with a tea towel to extract as much excess liquid as possible. Stir into prepared batter. Adjust seasoning with black pepper and salt.
- Grease a large frying pan with oil. Add the remaining butter, then spoon in the potato batter for each crepe, making 4 crepes in pan. Keep crepes well away from one another.
- Cook crepes over gentle heat for about 5-7 minutes or until undersides are golden. Turn over with a spatula and cook until crisp and golden.
- Transfer crepes to a warm serving plate. Add remaining butter to pan and cook remaining batter as above. Serve immediately.
