POTATO AND SPINACH PAKODA

Preparation Method :
- Beat the egg yolk and cheese in a bowl, adjust seasoning with salt and black pepper.
- Place potato puree and spinach in a large bowl, stir in the egg mixture.
- Make pakodas out of the mixture.
- Coat each pakoda evenly in flour and breadcrumbs.
- Heat the oil and deep-fry the pakoda in batches for 2-3 minutes or until golden brown. Drain well and serve hot.
INGREDIENTS
- 4 potatoes, peeled, cut into large pieces, cooked, drained and pureed
- 500 grams spinach, rinsed, cooked, drained and finely chopped
- 100 grams dry white breadcrumbs
- 25 grams grated mature cheddar cheese
- 1 egg yolk, lightly beaten
- 50 grams plain flour, seasoned with salt and pepper
- 2 eggs, lightly beaten
- Ground black pepper and salt to taste
- IDHAYAM MANTRA Peanut oil for deep-frying
