SAUTEED ARTICHOKE HEARTS AND POTATOES

Preparation Method :

  • Boil, steam or microwave potatoes until tender; drain, pat dry with absorbent paper.
  • Drain artichoke hearts, reserve ¼ cup (60 ml) of the oil; cut artichokes in half.
  • Heat reserved oil in pan, add onion, garlic and thyme, cook, stirring occasionally, until onion is soft.
  • Add potatoes and artichokes, cook, stirring occasionally, until vegetables are heated through and potatoes are lightly browned.

 

INGREDIENTS

  • 1 kg new baby potatoes, peeled, halved
  • 600 grams artichoke hearts in olive oil
  • 100 grams onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tablespoon chopped fresh thyme
