Preparation Method :
- Boil, steam or microwave potatoes until tender; drain, pat dry with absorbent paper.
- Drain artichoke hearts, reserve ¼ cup (60 ml) of the oil; cut artichokes in half.
- Heat reserved oil in pan, add onion, garlic and thyme, cook, stirring occasionally, until onion is soft.
- Add potatoes and artichokes, cook, stirring occasionally, until vegetables are heated through and potatoes are lightly browned.
