FISH WITH RED WINE SAUCE AND SWEET POTATOES STRAWS

Preparation Time :
20 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Heat oil and butter in large frying pan, add fish, cook until lightly browned on both sides.
  • Serve fish with red wine sauce and Sweet potatoes straws.

Red Wine Sauce:

  • Combine wine, wine vinegar and shallots in small pan over heat, simmer, uncovered, until reduced to 2 tablespoons of liquid.
  • Stir in cream, simmer, uncovered, until mixture is reduced to ¾ cup (150ml). Stir in chives and extra wine.

Sweet potatoes Straws:

  • Cut Sweet potatoes into 2mm slices, then into 2mm strips.
  • Just before serving, deep-fry Sweet potatoes in hot oil in batches until lightly browned and crisp; drain on absorbent paper.

INGREDIENTS

  • 2 tablespoons peanut oil
  • 50 grams butter
  • 1 kg boneless white fish fillets

Red Wine Sauce

  • 2 tablespoons dry red wine
  • 2 tablespoons red wine vinegar
  • 2 French shallots, finely chopped
  • 300 ml cream
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon dry red wine, extra

Sweet Potatoes Straws

  • 750 grams Sweet potatoes, peeled
  • Peanut oil for deep-frying
