FISH WITH RED WINE SAUCE AND SWEET POTATOES STRAWS

Preparation Method :
- Heat oil and butter in large frying pan, add fish, cook until lightly browned on both sides.
- Serve fish with red wine sauce and Sweet potatoes straws.
Red Wine Sauce:
- Combine wine, wine vinegar and shallots in small pan over heat, simmer, uncovered, until reduced to 2 tablespoons of liquid.
- Stir in cream, simmer, uncovered, until mixture is reduced to ¾ cup (150ml). Stir in chives and extra wine.
Sweet potatoes Straws:
- Cut Sweet potatoes into 2mm slices, then into 2mm strips.
- Just before serving, deep-fry Sweet potatoes in hot oil in batches until lightly browned and crisp; drain on absorbent paper.

- 1 kg boneless white fish fillets

- 2 tablespoons dry red wine
- 2 tablespoons red wine vinegar
- 2 French shallots, finely chopped
- 300 ml cream
- 2 tablespoons chopped fresh chives
- 1 teaspoon dry red wine, extra
Sweet Potatoes Straws
- 750 grams Sweet potatoes, peeled
- Peanut oil for deep-frying
