STIR-FRIED PORK WITH CELERY

Preparation Method :

  • Cut the pork into thin slices. Using a rolling pin, pound the meat lightly to flatten it.
  • Mix together the garlic, sugar, 4 teaspoons soy sauce and corn flour (cornstarch) and mix with the pork. Allow to stand for 30 minutes.
  • Meanwhile peel any strings from the celery and cut across into diagonal slices about half inch wide.
  • Blanch in boiling water for 2 minutes, drain and rinse in cold water.
  • Heat 2 tablespoons of the oil in a wok or large, heavy-based frying pan. Fry the pork slices on both sides until golden brown, adding a little more oil, if necessary, to prevent sticking. This should take 4 to 8 minutes.
  • When the pork is browned, quickly stir in the remaining soy sauce and celery. Wait a moment until it is heated through, and then transfer to a heated serving plate.
  • Serve at once with plain boiled rice.

  • 8 sticks celery 
  • 4-6 tablespoons oil
