QUICK-FRIED PORK WITH BEAN SPROUTS

Preparation Method :

  • Cut the pork slices into 2.5 cm/1 inch pieces and rub with half the soy sauce and 2 tablespoon of the oil. Sprinkle with the salt and pepper.
  • Heat the remaining oil in a pan over high heat. Add the pork and stir-fry for 2 minutes, then remove from the pan using a slotted spoon.
  • Add the bean sprouts and chopped spring onions (scallions) to the pan and stir-fry for 1 minute. Sprinkle in the remaining soy sauce, the sugar and water.
  • Stir-fry for 30 seconds. Return the pork to the pan. Add the sherry and stir-fry for a further 1 minute.
  • To serve, place the cooked rice in a warmed serving dish and arrange the pork and bean sprout mixture on top.

INGREDIENTS

  • 700 grams lean pork, thinly sliced
  • 4 tablespoons soy sauce
  • 8 tablespoons oil 
  • 2 teaspoon salt freshly ground pepper 
  • 500 grams fresh bean sprouts
  • 8 spring onions cut into 2.5 cm / 1 inch pieces
  • 2 teaspoon sugar
  • 4 tablespoons boiling water 
  • 3 tablespoons dry sherry boiled rice to serve
