CHINESE SPICY PORK IN PANCAKES

Preparation Method :

  • Chinese Pancakes : Sift flour into a mixing bowl, pour in little boiling water at a time to make a soft dough.
  • Turn dough onto a lightly floured board and knead for about 10 minutes or until it feels pliable.
  • Wrap in plastic food wrap and set aside to rest for about 10 - 15 minutes.
  • Roll out dough to ¼ inch thickness on a lightly floured surface and cut into discs. Brush tops of circles with sesame oil and press oiled surfaces in pairs.
  • Roll out each sandwich into a slightly bigger circle. Heat a small quantity of vegetable oil in a heavy frying pan and cook pancakes for about 1 - 1½ minutes on each side.
  • Chinese Spicy Pork : Heat oil in a wok or large frying pan over a medium heat, add ginger and garlic and stir fry for 2-3 minutes or until softened.
  • Add pork, increase heat and stir fry for 4-5 minutes or until pork is golden.
  • Add soy sauce, wine or sherry, sugar, and black pepper to pan and continue cooking for 3-4 minutes longer or until liquid is absorbed and pork is tender and dark brown.
  • Remove and peel apart before stacking on a warm plate. Spread each pancake with a little bean paste, a slice of spring onion and a spoonful of pork. Roll up and serve.
  • Serve pork rolled up in pancakes spread lightly with bean paste and sprinkled with spring onions.

INGREDIENTS

  • 75 ml peanut oil
  • 1 teaspoon finely grated fresh ginger
  • 2 cloves garlic, crushed
  • 750 grams pork fillet, cut into fine shreds
  • 75 ml light soy sauce
  • 2 tablespoon Chinese rice wine or dry sherry
  • 2 teaspoon sugar
  • 1 teaspoon freshly ground black pepper
  • Sliced spring onions and Chinese bean paste (in jar), to serve

Chinese Pancakes

  • 150 ml boiling water
  • 250 grams plain flour 
  • 2 tablespoon Chinese sesame oil
  • Vegetable oil, for cooking
