PORK FILLET IN GINGER SAUCE

20 minutes

Preparation Method :

  • Cut the pork into half inch slices. Place between sheets of cling film (plastic wrap) and flatten slightly with a rolling pin.
  • Place in a shallow glass or earthenware dish and sprinkle with the lemon juice, ginger, thyme and salt and pepper to taste. Leave to marinate for 15 minutes.
  • Heat the oil and butter in frying pan, add the onion and fry gently until golden. Place flour on plate and coat the pork slices.
  • Add the pork to the onions and cook on both sides until brown. Add marinade and stock, bring to boil and cook gently for 5 minutes.
  • Serve with courgettes (zucchini) and plain rice. 

INGREDIENTS

  • 700 grams pork fillet 
  • 4 tablespoons lemon juice 
  • 8 slices fresh root ginger chopped 
  • 2 tablespoon chopped fresh lemon thyme or 
  • 1 teaspoon dried thyme
  • Salt and freshly ground pepper 
  • 2 tablespoon oil
  • 30 grams butter
  • 2 medium onion, finely chopped
  • 4 tablespoons plain flour 
  • 300 ml stock
