Preparation Method :
- Snip the fat edges of the steaks to prevent curling. Brush with the butter and place under a preheated moderate grill (broiler) for 5 minutes.
- Slice the black pudding (blood sausage) into 4 pieces. Core the apple and cut into 4 rings. Turn the bacon steaks over and place the apple rings and black pudding (blood sausage) on top.
- Brush with butter. Continue to grill (broil) for a further 5 minutes, turning the topping once.
- Transfer to a warmed serving dish and keep hot.
- Drain the liquid from the grill (broiler) pan into a pan. Add the redcurrant jelly, wine vinegar and brown sugar.
- Boil until the mixture is well blended and slightly syrupy. Spoon the sauce over each bacon steak and garnish with a parsley sprig.
- Serve with mashed potatoes and minted peas.
