Preparation Method :
- Mix the spices and seasonings to a thick paste with a little of the vinegar, then rub into the pork.
- Heat oil in a heavy frying pan, add the garlic and saute for 1 to 2 minutes, stirring frequently.
- Add the pork to the pan and cover with the remaining vinegar.
- Bring to the boil, and then lower the heat, cover and simmer for about 1 hour or until the meat are tender.
- Serve hot.
INGREDIENTS
- 1 teaspoon cardamom seeds
- 1 teaspoon ground cloves
- 1 teaspoon ground ginger
- 2 tablespoon ground coriander
- 4 teaspoons ground turmeric
- 8 teaspoons ground chili
- 2 teaspoon ground cumin
- 2 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 300 ml vinegar
- 750 grams boned pork, cut into 1 inch cubes
- 100 ml IDHAYAM sesame oil
- 10 cloves garlic, peeled and sliced
