PORK CHOPS WITH POACHED QUINCES

Preparation Method :

  • Heat the oil in a large frying pan over high heat. Add the chops and sear for 2 minutes on each side. Set aside.
  • Sauté the onion and garlic in the remaining oil in the pan over medium heat until softened, 5 minutes. Add the quince and simmer for 3 minutes.
  • Turn up the heat. Pour in the wine and let it evaporate. Stir in the orange juice, chicken stock, cinnamon stick, and honey.
  • Simmer over low heat until the sauce has reduced a little, about 10 minutes. Return the pork to the pan and simmer until cooked through, about 10 minutes. Stir in the parsley.
  • Season with salt and pepper. Serve hot.

INGREDIENTS

  • 5 tablespoons sesame oil
  • 6 pork loin chops, bone-in
  • 2 onions, thinly sliced
  • 2 clove garlic, finely chopped
  • 2 medium quince, peeled, cored, and cut into thin wedges
  • 150 ml dry white wine
  • Freshly squeezed juice of 1 orange
  • 100 ml chicken stock
  • 2-inch long cinnamon stick
  • 2 tablespoon honey
  • 2 tablespoon finely chopped fresh parsley
  • Salt and freshly ground black pepper
