PORK CHOPS WITH PIQUANT SAUCE

Preparation Method :
- Snip the fat on the chops to prevent curling and cook under a preheated moderate grill (broiler) for 10 to 12 minutes on each side.
- Melt the butter in a pan and sauté the onion for 5 minutes. Stir in the flour and cook for 1 minute.
- Remove from the heat and gradually add the stock, ketchup and brown sauce. Heat, stirring, until the sauce comes to the boil.
- Add the gherkins and salt and pepper to taste and heat through for 2 minutes.
- Place the chops on warmed plates and spoon the sauce over.
- Serve with rice and green vegetables.

- 500 ml stock
- 4 teaspoons tomato ketchup
- 4 teaspoons brown sauce
- 4 midget gherkins, sliced
