GRILLED VEGETABLE PIZZA

Preparation Method :

  • Preheat the oven to 190°C / 375°F / Gas Mark 5. Put a baking sheet in the oven to heat up.
  • Cook the potato in lightly salted boiling water until tender. Peel and mash with the oil until smooth.
  • Sift the flour and salt into a bowl. Stir in the yeast. Add the mashed potato and warm water, mix to a soft dough. Knead for about 5 minutes or until smooth.
  • Put the dough in a bowl, cover with clingfilm and leave to rise in a warm place for about half an hour.
  • The Topping: Arrange the aubergine, courgettes, pepper and onion, skin-side up, on a grill rack and brush with the oil. Grill for about 5 minutes.
  • Turn the vegetables and brush with the remaining oil. Grill at least for 3-5 minutes. Cool, skin and slice the pepper.
  • Put all of the vegetables in a bowl, add the halved new potatoes and toss gently together. Set aside.
  • Knead the dough then roll out to a 10-12 inch round.
  • Mix the tomatoes and oregano together, spread over the pizza base.
  • Scatter over the mozzarella cheese. Put the pizza on the preheated baking sheet and bake for about 8-10 minutes.
  • Arrange the vegetables and goat's cheese on top and bake for another 10 minutes. Serve.

INGREDIENTS

  • 150 grams baking potato
  • 15 ml IDHAYAM sesame oil
  • 225 grams All purpose flour
  • Salt, to taste
  • 1 teaspoon easy-blend dried yeast

The Topping

  •  2-3 cooked new potatoes, halved
  • 420 grams chopped tomatoes, drained
  • 1 aubergine, thinly sliced
  • 2 small courgettes, trimmed and sliced lengthways
  • 1 yellow pepper, quartered and deseeded
  • 1 red onion, peeled and sliced into very thin wedges
  • 50 ml IDHAYAM sesame oil
  • 3 teaspoon freshly chopped oregano
  • 150 grams mozzarella cheese, cut into small cubes
  • 100 grams goats' cheese, crumbled
