CHICKEN PIZZA MEXICANA

Preparation Method :

  • Rub the chicken with the lime rind and coriander seeds.
  • Heat the oil in a frying pan, add the chicken pieces and stir-fry for 3 minutes.
  • Put the pizza base on a greased perforated pizza pan.
  • Sprinkle with the mozzarella and smoked cheese, then add the drained and rinsed kidney beans, sweet corn and chilli.
  • Arrange the onion and pepper slices on top, along with the chicken.
  • Drizzle with the remaining oil and season to taste with salt and pepper.
  • Bake in a preheated oven for about 20 minutes.
  • Serve immediately, with a tomato and onion salad.
  • If liked and garnished with coriander.

INGREDIENTS

  • 500 grams boneless, skinless chicken, cut into 1 ½ cm pieces
  • Finely grated rind of 4 limes
  • 2 teaspoon coriander seeds, crushed
  • 4 tablespoons cooking oil
  • 2 ready-made 30 cm pizza base
  • 200 grams mozzarella cheese, grated
  • 100 grams smoked cheese, grated
  • 100 grams canned red kidney beans
  • 100 grams frozen sweet corn kernels, thawed
  • 2 fresh chili, deseeded and finely chopped
  • 1 red onion, very thinly sliced
  • 1 red pepper, cored, deseeded and very thinly sliced
  • Salt and pepper
  • Coarsely chopped fresh coriander, to garnish
