CHEESY POTATO PIZZA

1 hour

Preparation Method :

  • Grease 24 cm round loose-base flan tin.
  • Boil, steam or microwave potatoes until tender; mash with butter, parmesan cheese and egg until smooth; cool, spread potato mixture over base of prepared tin, refrigerate 30 minutes or until slightly firm.
  • Gently spread tomato paste over potato base, top with tomato slices, 1 cup (100 grams) of the mozzarella cheese, salami, mushrooms, oregano, onion and remaining cheese.
  • Bake in moderately hot oven 30 minutes or until lightly browned and hot.

 

INGREDIENTS

  • 500 grams old potatoes, peeled, chopped
  • 25 grams butter
  • 25 grams finely grated parmesan cheese
  • 1 egg, lightly beaten
  • 100 ml tomato paste
  • 150 grams tomato, seeded, thinly sliced
  • 150 grams grated mozzarella cheese
  • 100 grams salami
  • 50 grams button mushrooms, thinly sliced teaspoons
  • 2 teaspoons chopped fresh oregano
  • 100 grams onion, sliced
