TAGLIATELLE WITH OCTOPUS

Preparation Method :
- Add tagliatelle to a large pan of rapidly boiling water and cook until just tender.
- Drain, keep warm.
- Clean octopus and cut them in half.
- While pasta is cooking, heat oil in a large frying pan.
- Add onion and garlic and stir over low heat until onion is tender.
- Add tomato puree, wine, chilli sauce, basil, salt and pepper to pan. Bring to the boil.
- Reduce heat and simmer for 10 minutes.
- Add octopus to pan. Simmer mixture for 5-10 minutes or until tender.
- Pour octopus sauce over pasta and serve immediately.
INGREDIENTS
- 500 grams mixed tagliatelle
- 1 kg baby octopus
- 2 tablespoons Cooking oil
- 1 onion, sliced
- 1 clove garlic, crushed
- 500 grams can tomato puree
- 100 ml dry white wine
- 1 tablespoon chilli sauce
- 1 tablespoon chopped fresh basil
- Salt and freshly ground black pepper, to taste
