SPAGHETTI WITH TOMATO AND BACON

Preparation Method :

  • Heat the oil in a heavy-based frying pan, add the bacon and fry gently for 5 minutes until the pieces start to become crisp.
  • Add the tomatoes with their juice and the pimento and continue cooking over moderate heat for 10 minutes, stirring occasionally and pressing tomatoes to break them up.
  • Meanwhile cook the spaghetti in boiling salted water for 10 to 12 minutes. Drain well and place in warmed serving dish. Taste sauce and adjust seasoning, then pour over the spaghetti and toss gently.
  • Serve immediately with Pecorino or Parmesan cheese, with a green salad.

  • 2 tablespoon Cooking oil 
  • 200 gram lean bacon, diced 
  • 500 gram tomatoes 
  • 2 canned pimento, chopped
  • 400 gram spaghetti 
  • Salt and freshly ground pepper 
  • Grated Pecorino or Parmesan cheese to serve
