SPAGHETTI WITH LOBSTER

Preparation Method :
- Remove all the meat from the lobster and cut it into chunks.
- Heat the oil in a saucepan. Add the shallots and sauté for 3 minutes. Add the tomatoes and lemon juice.
- Season with salt and pepper and cook for 3 minutes more.
- Meanwhile, bring a large saucepan of water to a boil.
- Cook the spaghetti for 3-4 minutes if fresh 8 minutes if dried, or according to packet directions.
- Add the lobster to the tomato sauce and stir, then reduce the heat and cook for 4 minutes.
- Drain the pasta well. Add the sauce to the pasta with the chives.
- Toss with 2 wooden spoons and serve immediately.

- 1 kg cooked lobster, cut in half lengthwise
- 8 tablespoons Cooking oil
- 4 shallots, chopped
- 15 plum tomatoes, peeled, seeded and chopped
- Juice of 2 lemons
- 300 grams spaghetti
- Handful of chives, snipped
- Salt and pepper
