SPAGHETTI WITH CHILI CALAMARI

Preparation Method :
- Pull tentacles from body of calamari.
- Using fingers pull quill from pouch of calamari. Pull skin away from flesh and discard.
- Using a sharp knife, slit the tubes up one side, lay out flat and scores one side in a diamond pattern. Cut into four.
- Add spaghetti to a large pan of rapidly boiling water and cook until just tender.
- Drain and keep warm. While pasta is cooking, heat oil in a large frying pan.
- Add leek and cook for 2 minutes. Add garlic and stir over low heat for 1 minute. Stir in chilli and cayenne.
- Add undrained, crushed tomatoes, stock and herbs. Bring to boil. Reduce heat; simmer 5 minutes.
- Add calamari to pan. Simmer for another 5-10 minutes or until tender.
- Serve Chili Calamari over spaghetti. Serve with salad, if desired.
INGREDIENTS
- 500 grams calamari, cleaned
- 500 grams spaghetti
- 15 ml Cooking oil
- 1 leek, chopped
- 2 cloves garlic, crushed
- 5 grams chopped chilli
- ½ teaspoon cayenne pepper
- 450 grams can tomatoes
- 100 grams fish stock
- 1 tablespoon chopped fresh basil
- 2 teaspoons chopped fresh sage
- 1 teaspoon chopped fresh marjoram
