SPAGHETTI PROVENCALE

Preparation Method :

  • Heat the oil in a heavy-based pan and cook the onion and garlic for 3 minutes.
  • Add the green pepper, aubergine (eggplant), tomatoes with their juice, basil and oregano and plenty of salt and pepper.
  • Bring to the boil, pressing gently on the tomatoes to break them up. Cover and simmer for 30 minutes.
  • Cook the spaghetti in boiling salted water for 15 minutes or until just tender.
  • Drain and rinse with boiling water, then divide between two warmed serving plates and spoon the vegetables on top. Mix together the cheeses, and then sprinkle over.
  • Serve with a green salad. 

INGREDIENTS

  • 4 teaspoons Cooking oil
  • 2 onion, chopped 
  • 2 clove garlic, crushed
  • 1 green pepper, cored, seeded and chopped 
  • 2 small aubergine, chopped 
  • 500 gram tomatoes 
  • 1 teaspoon dried basil 
  • 1 teaspoon dried oregano
  • Salt and freshly ground pepper
  • 200 gram spaghetti 
  • 100 gram Cheddar cheese, grated 
  • 50 gram grated Parmesan cheese
