Preparation Method :
- Heat the oil in a large saucepan, add the onion and cook over medium heat for 5-8 minutes, or until golden.
- Add the garlic, tomato, tomato paste, wine, sugar, lemon zest, half the basil and 250 ml / 9 oz / 1 cup water.
- Cook for 1 hour, stirring occasionally, or until the sauce is reduced and thickened. Season with salt and ground black pepper.
- Add the prawns to the pan and cook for 1 minute, then add the scallops and cook for 2 minutes.
- Stir in the squid and cook for 1 minute more, or until all of the seafood is cooked through and tender.
- Meanwhile, cook the spaghetti in a large saucepan of boiling water until al dente.
- Drain and toss with the sauce, parsley and remaining basil. Serve topped with shavings of parmesan cheese.

- 800 grams tins crushed tomatoes
- 2 tablespoons tomato paste (concentrated puree)
- 170 ml dry white wine
- 2 teaspoons soft brown sugar
- 1 teaspoon finely grated lemon zest
- 2 tablespoons chopped basil
- 12 raw medium prawns (shrimp), peeled and deveined
- 12 large scallops, without roe, membrane removed
- 2 small squid tubes cleaned and cut into 1 cm ( ½ inch) rings
- 300 grams spaghetti
- 2 tablespoons finely chopped flat-leaf (Italian) parsley
- Shaved parmesan cheese, to serve
