SPAGHETTI MARINARA

Preparation Time :
20 minutes

Cooking Time :
1 hour 30 minutes

Preparation Method :

  • Heat the oil in a large saucepan, add the onion and cook over medium heat for 5-8 minutes, or until golden.
  • Add the garlic, tomato, tomato paste, wine, sugar, lemon zest, half the basil and 250 ml  / 9 oz / 1 cup water.
  • Cook for 1 hour, stirring occasionally, or until the sauce is reduced and thickened. Season with salt and ground black pepper.
  • Add the prawns to the pan and cook for 1 minute, then add the scallops and cook for 2 minutes.
  • Stir in the squid and cook for 1 minute more, or until all of the seafood is cooked through and tender.
  • Meanwhile, cook the spaghetti in a large saucepan of boiling water until al dente.
  • Drain and toss with the sauce, parsley and remaining basil. Serve topped with shavings of parmesan cheese.

INGREDIENTS

  • 1 tablespoon Cooking oil
  • 1 onion, chopped
  • 3 garlic cloves, crushed
  • 800 grams tins crushed tomatoes
  • 2 tablespoons tomato paste (concentrated puree)
  • 170 ml dry white wine
  • 2 teaspoons soft brown sugar
  • 1 teaspoon finely grated lemon zest
  • 2 tablespoons chopped basil
  • 12 raw medium prawns (shrimp), peeled and deveined
  • 12 large scallops, without roe, membrane removed
  • 2 small squid tubes cleaned and cut into 1 cm ( ½ inch) rings
  • 300 grams spaghetti
  • 2 tablespoons finely chopped flat-leaf (Italian) parsley
  • Shaved parmesan cheese, to serve
