SPAGHETTI CARBONARA

Preparation Time :

Cooking Time :
15 minutes

Preparation Method :

  • Remove rind from bacon and discard. Cut bacon into thin strips.
  • Add bacon strips to a heavy-based frying pan and cook over medium heat until crisp.
  • Remove and drain on paper towels.
  • Add pasta to a large pan of rapidly boiling water and cook until just tender. Drain in a colander and return to pan, Set aside.
  • While pasta is cooking, beat eggs, parmesan and cream in a small bowl.
  • Add bacon to bowl and pour mixture over the hot pasta; toss well.
  • Return pan to heat and cook mixture, over very low heat, for atleast 1 minute or until mixture just thickens .
  • Add pepper and serve immediately. May be garnished with sprigs of fresh herbs, if desired.

INGREDIENTS

  • 8 rashers bacon
  • 500 grams spaghetti
  • 4 eggs
  • 100 grams freshly grated parmesan
  • 300 ml Cheese (thickened or pouring cream)
  • ground black pepper, to taste
