Preparation Method :
- Remove rind from bacon and discard. Cut bacon into thin strips.
- Add bacon strips to a heavy-based frying pan and cook over medium heat until crisp.
- Remove and drain on paper towels.
- Add pasta to a large pan of rapidly boiling water and cook until just tender. Drain in a colander and return to pan, Set aside.
- While pasta is cooking, beat eggs, parmesan and cream in a small bowl.
- Add bacon to bowl and pour mixture over the hot pasta; toss well.
- Return pan to heat and cook mixture, over very low heat, for atleast 1 minute or until mixture just thickens .
- Add pepper and serve immediately. May be garnished with sprigs of fresh herbs, if desired.

- 8 rashers bacon
- 500 grams spaghetti
- 4 eggs
- 100 grams freshly grated parmesan
- 300 ml Cheese (thickened or pouring cream)
- ground black pepper, to taste
