Preparation Method :
- Oil a 28 x 20 cm ovenproof dish. Cook pasta in large pan of rapidly boiling water until just tender; drain well. Allow to cool slightly; return to pan.
- Add ricotta, prosciutto, egg, parmesan, nutmeg, salt and pepper to pasta. Press into prepared dish. Set aside.
- To make Meat Sauce : Heat oil in large pan. Add onion and garlic; stir over low heat until onion is tender. Add mince; brown well, breaking up with a fork as it cooks.
- Add undrained, crushed tomatoes, wine, stock, tomato paste, parsley, oregano, salt and pepper; stir.
- Bring to the boil. Reduce heat. Simmer, uncovered, for 20- 25 minutes. Spoon over the pasta layer. Set it aside.
- Preheat oven to moderate 180°C. To make Cheese Sauce: Melt butter in medium pan. Add flour and cook, stirring, for atleast 1 minute. Remove from heat.
- Gradually add milk and cream, stirring until smooth. Return to heat. Cook, stirring constantly, until sauce boils and thickens.
- Reduce heat; simmer 3 minutes. Remove from heat. Whisk in eggs, cheese, nutmeg, salt and pepper. Spoon over meat layer.
- Sprinkle with combined breadcrumbs and parmesan. Bake 25 minutes

- 250 grams tub ricotta cheese

- 1 onion, chopped
- 1 clove garlic, crushed
- 500 grams beef mince
- 425 grams can tomatoes
- 120 ml red wine
- 100 grams beef stock
- 2 tablespoons tomato paste
- 2 tablespoons chopped fresh parsley
- ½ teaspoon ground oregano
- Salt and freshly ground black pepper, to taste
Cheese Sauce
- 60 grams butter or margarine
- 50 grams plain flour
- 320 ml milk
- 250 ml thickened or pouring cream
- 2 eggs, beaten
- 220 grams freshly grated cheddar cheese
- ¼ teaspoon ground nutmeg
- Salt and freshly ground black pepper, to taste
- 50 grams fresh breadcrumbs
- 50 grams freshly grated parmesan cheese
