SHELLS WITH BROCCOLI AND ANCHOVY

Preparation Method :

  • Add pasta to a large pan of boiling water and cook until just tender. Drain and return to pan.
  • While pasta is cooking, cut broccoli into small florets. Cook for 2 minutes in a pan of boiling water ; drain.
  • Place in cold water; drain again. Set aside.
  • Heat oil in a heavy-based frying pan. Add onion, garlic and anchovies; cook over low heat for 3 minutes, stir it while cooking.
  • Add cream to pan and stir it constantly, bring to the boil. Reduce heat and simmer for 3-5 minutes.
  • Add broccoli florets and cook for 2 minutes. Add salt and pepper. Add sauce to pasta and toss well to combine.
  • Serve in warmed pasta plates. Sprinkle with freshly grated parmesan cheese and serve immediately.

INGREDIENTS

  • 500 grams small shell pasta
  • 425 grams broccoli
  • 1 tablespoon Cooking oil
  • 1 medium onion, chopped
  • 1 clove garlic, crushed
  • 3 anchovy fillets, chopped
  • 300 ml thickened or pouring cream
  • Salt and pepper, to taste
  • 100 grams freshly grated parmesan cheese, for serving
