RIGATONI WITH KIDNEY BEANS AND ITALIAN SAUSAGE

Preparation Method :
- Heat oil in a medium heavy-based pan.
- Add onion, garlic and sausage to pan and cook, stir it occasionally over medium heat for 5 minutes.
- Add undrained, crushed tomatoes, beans, basil, sage, parsley, salt and pepper. Reduce heat and simmer for 20 -22 minutes.
- While sauce is cooking, add pasta to a large pan of boiling water and cook until just tender, Drain it.
- Divide pasta between warmed serving bowls, top with sauce. Sprinkle with parmesan cheese and serve immediately.

- 1 large onion, chopped
- 2 cloves garlic, crushed
- 4 Italian sausages, chopped
- 850 grams can tomatoes
- 450 grams can kidney or borlotti beans, drained
- 2 tablespoons chopped fresh basil
- 1 tablespoon chopped fresh sage
- 1 tablespoon chopped fresh parsley
- Salt and pepper(to taste)
- 500 grams rigatoni or large shells
- 50 grams freshly grated parmesan cheese, for serving
