RIGATONI WITH KIDNEY BEANS AND ITALIAN SAUSAGE

Preparation Method :

  • Heat oil in a medium heavy-based pan.
  • Add onion, garlic and sausage to pan and cook, stir it occasionally over medium heat for 5 minutes.
  • Add undrained, crushed tomatoes, beans, basil, sage, parsley, salt and pepper. Reduce heat and simmer for 20 -22 minutes.
  • While sauce is cooking, add pasta to a large pan of boiling water and cook until just tender, Drain it.
  • Divide pasta between warmed serving bowls, top with sauce. Sprinkle with parmesan cheese and serve immediately.

INGREDIENTS

  • 1 tablespoon Cooking oil
  • 1 large onion, chopped
  • 2 cloves garlic, crushed
  • 4 Italian sausages, chopped
  • 850 grams can tomatoes
  • 450 grams can kidney or borlotti beans, drained
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh sage
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper(to taste)
  • 500 grams rigatoni or large shells
  • 50 grams freshly grated parmesan cheese, for serving
