PENNE WITH FAVA BEANS, ASPARAGUS AND MINT

Preparation Method :

  • Place the asparagus on a baking sheet. Brush generously with oil and season with salt and pepper.
  • Place under a preheated boiler and cook for 8 minutes, turning as the stalks brown.
  • Meanwhile, bring a large saucepan of water to a boil and cook the penne for 6 minutes if fresh or 10 minutes if dried or according to packet directions.Cook the beans or peas in a separate saucepan of lightly salted boiling water for 2 minutes.
  • Drain the pasta. Pour the cream into the empty pasta pan over the heat. Add the cooked beans or peas, broiled asparagus, and Parmesan.
  • Season with salt and pepper. Return the cooked pasta to the pan.
  • Add the mint and toss well with 2 wooden spoons.
  • Serve at once.

INGREDIENTS

  • 750 grams asparagus, trimmed and cut into short lengths
  • 8 tablespoons Cooking oil
  • 400 grams penne
  • 500 grams shelled fava beans or peas
  • 10 tablespoons heavy cream
  • 250 grams freshly grated Parmesan Cheese
  • 8 tablespoons chopped mint
  • Salt and Pepper
