PENNE WITH CREAMY TOMATO SAUCE

Preparation Method :
- Remove and discard bacon rind. Cut bacon into small pieces.
- Using a sharp knife, mark a small cross on the bottom of each tomato.
- Place tomatoes in boiling water for 2 minutes; plunge into cold water.
- Remove from water and peel skin down from cross.
- Cut tomatoes in half and scoop out seeds with a teaspoon. Finely chop tomatoes.
- Add pasta to a large pan of rapidly boiling water and cook until just tender.
- Drain and keep warm.
- While pasta is cooking, heat oil in a heavy-based frying pan.
- Cook bacon and spring onion over medium heat for 5 minutes, stir it occasionally.
- Add basil, cream, salt and pepper, and simmer for about 5 minutes.
- Add tomatoes and cook for 2 minutes or until heated through.
- Divide pasta into warmed serving bowls. Top with sauce. Serve immediately.

- 2 rashers bacon
- 4 large ripe tomatoes
- 500 grams penne
- 1 tablespoon IDHAYAM Sesame oil
- 2 spring onions, chopped
- 2 tablespoons chopped fresh basil
- 250 ml thickened or pouring cream
- Salt and pepper, to taste
