PENNE WITH CHICKEN AND MUSHROOMS

Preparation Method :
- Heat butter and oil in a large frying pan.
- Add onion and garlic and stir over low heat until onion is tender. Add prosciutto to pan and fry until crisp.
- Add chicken and cook over medium heat atleast for 4 minutes. Add mushrooms and cook for another 2 minutes.
- Add tomato and tomato paste and stir until combined. Add wine and stir. Bring to the boil.
- Reduce heat and simmer until liquid is reduced by half. Stir in cream, salt and pepper. Bring to the boil.
- Reduce heat and simmer until sauce begins to thicken.
- While sauce is cooking, add penne to a large pan of rapidly boiling water and cook until just tender. Drain well and return to pan.
- Add sauce to pasta and toss to combine. Serve immediately, sprinkled with parmesan.
INGREDIENTS
- 35 grams butter or margarine
- 1 tablespoon Cooking oil
- 1 onion, sliced
- 1 clove garlic, crushed
- 60 grams prosciutto, chopped
- 250 grams chicken thigh fillets, trimmed and sliced
- 150 grams mushrooms, sliced
- 1 tomato, peeled, halved and sliced
- 1 tablespoon tomato paste
- 100 ml white wine
- 200 ml thickened or pouring cream
- Freshly ground black Pepper and Salt to taste
- 500 grams penne
- 20 grams freshly grated parmesan cheese, for serving
