PASTA WITH RICOTTA, CHILI AND HERBS

Preparation Method :
- Add pasta to a large pan of rapidly boiling water and cook until just tender. Drain and return to pan.
- When pasta is almost cooked, heat oil in a non-stick heavy-based frying pan.
- 0Add garlic and chilli to pan and stir for 2 minutes over low heat.
- Add oil mixture, herbs, salt and pepper to pasta. Toss well until mixture coats pasta thoroughly.
- Add cubes of ricotta and serve immediately.
INGREDIENTS
- 500 grams spiral pasta or penne
- 50 ml Cooking oil
- 3 cloves garlic, crushed
- 2 teaspoons very finely chopped fresh chilli
- 200 grams fresh flat-leaf parsley leaves, roughly chopped
- 100 grams fresh basil leaves, shredded
- 100 grams fresh oregano leaves, roughly chopped
- Salt and pepper, to taste
- 200 grams fresh ricotta cheese, cut into small cubes
