PASTA WITH RICOTTA, CHILI AND HERBS

Preparation Method :

  • Add pasta to a large pan of rapidly boiling water and cook until just tender. Drain and return to pan.
  • When pasta is almost cooked, heat oil in a non-stick heavy-based frying pan.
  • 0Add garlic and chilli to pan and stir for 2 minutes over low heat.
  • Add oil mixture, herbs, salt and pepper to pasta. Toss well until mixture coats pasta thoroughly.
  • Add cubes of ricotta and serve immediately.

INGREDIENTS

  • 500 grams spiral pasta or penne
  • 50 ml Cooking oil
  • 3 cloves garlic, crushed
  • 2 teaspoons very finely chopped fresh chilli
  • 200 grams fresh flat-leaf parsley leaves, roughly chopped
  • 100 grams fresh basil leaves, shredded
  • 100 grams fresh oregano leaves, roughly chopped
  • Salt and pepper, to taste
  • 200 grams fresh ricotta cheese, cut into small cubes
