Preparation Method :
- Put all the ingredients in a large pan, except the pasta, parsley and Parmesan cheese.
- Cover and cook gently for 30 minutes until the vegetables are tender and the juices have thickened slightly, stirring occasionally.
- Meanwhile, cook the pasta in a large pan containing plenty of boiling salted water until just tender. Drain and pile into a warmed dish.
- Taste and adjust the seasoning of the sauce, then pour over the pasta.
- Sprinkle with the parsley and grated Parmesan cheese.
- Serve hot.

- 2 large onion, peeled and chopped
- 2 clove garlic, peeled and crushed
- 1 kg courgettes, sliced
- 2 large aubergine, diced
- 2 green pepper, cored, deseeded and diced
- 1 kg tomatoes, skinned and chopped
- 2 tablespoon chopped oregano or basil
- Salt
- Freshly ground black pepper
- 1 kg pasta
- 2 tablespoon chopped parsley
- Grated Parmesan cheese, to serve
