LEMON AND BASIL ORZO

Preparation Method :

  • Using a mortar and pestle or a food processor or blender, blend the garlic, basil, oil, and lemon peel and juice together until smooth.
  • Meanwhile bring a large saucepan of water to a boil. Cook the orzo for 6-8 minutes, or according to packet directions.
  • Add the Parmesan to the basil mixture and blend well. Season with salt and pepper.
  • Drain the pasta thoroughly. Add the pesto and mix well so that the sauce is distributed evenly throughout the pasta.
  • Serve immediately.

INGREDIENTS

  • 4 garlic cloves, crushed
  • Large handful of basil leaves
  • 10 tablespoons Cooking oil
  • Peel and juice of 4 lemons
  • 400 grams dried orzo
  • 500 grams freshly grated Parmesan cheese
  • Salt and Pepper
