CHEESE TORTELLINI WITH NUTTY HERB SAUCE

15 minutes

Preparation Method :

  • Add Pasta to a pan of rapidly boiling water and cook until just tender.
  • Drain pasta in colander and return to pan.
  • Heat butter in heavy-based pan over medium heat until foaming.
  • Add walnuts and pine nuts and stir for at least 5 minutes or until golden brown. Add parsley, thyme, salt and pepper.
  • Beat ricotta with cream. Add Nutty Herb Sauce to pasta and toss well to combine. Top with a dollop of ricotta cream. Serve immediately.

INGREDIENTS

  • 500 grams ham and cheese-filled fresh or (dried tortellini or ravioli)
  • 100 grams walnuts (chopped)
  • 4 tablespoons butter
  • 100 grams pine nuts
  • 2 tablespoons chopped fresh parsley 
  • 2 teaspoons fresh thyme salt and pepper, to taste 
  • 50 grams fresh ricotta cheese 
  • 50 grams thickened or pouring cream
