CHEESE TORTELLINI WITH NUTTY HERB SAUCE

Preparation Method :
- Add Pasta to a pan of rapidly boiling water and cook until just tender.
- Drain pasta in colander and return to pan.
- Heat butter in heavy-based pan over medium heat until foaming.
- Add walnuts and pine nuts and stir for at least 5 minutes or until golden brown. Add parsley, thyme, salt and pepper.
- Beat ricotta with cream. Add Nutty Herb Sauce to pasta and toss well to combine. Top with a dollop of ricotta cream. Serve immediately.
INGREDIENTS
- 500 grams ham and cheese-filled fresh or (dried tortellini or ravioli)
- 100 grams walnuts (chopped)
- 4 tablespoons butter
- 100 grams pine nuts
- 2 tablespoons chopped fresh parsley
- 2 teaspoons fresh thyme salt and pepper, to taste
- 50 grams fresh ricotta cheese
- 50 grams thickened or pouring cream
