Preparation Method :
- Preheat the oven to 200°C. Toss cubed pumpkin, rosemary and sage in oil. Tip onto a baking tray and roast until soft.
- Cook the pasta and drain well.
- In a frying pan, on a low flame, fry shallot.
- Add soured cream, white wine and a large pinch each of salt and pepper.
- Simmer until the liquid has reduced by half.
- Add the pasta, roasted pumpkin, more sage and toss. Sprinkle over lemon zest and serve immediately.
INGREDIENTS
- 250 grams cubed pumpkin
- ½ sprig of rosemary
- A handful of sage
- 1 tablespoon Sesame oil
- 150 grams pasta
- 1 chopped shallot
- 2 tablespoon soured cream
- 50 ml white wine
- A large pinch each of salt and pepper
- ½ tablespoon lemon zest
