LINGUINE WITH RED PEPPER SAUCE

Preparation Method :
- Cut capsicum into halve and use a sharp knife to remove all the membrane and seeds.
- Place capsicum cut-side down under a hot grill and cook for 10 minutes or until black and blistered.
- Cover with a damp tea towel and allow to cool. Peel off skin and cut capsicum into thin strips.
- Heat oil in large heavy based pan. Add sliced onion and cook over low heat for 8 minutes or until soft , stir it .
- Add capsicum, garlic, chilli and cream and cook for 2 minutes, stir it occasionally. Add salt, pepper and chopped oregano.
- Before the sauce is cooked, add pasta to a large pan of rapidly boiling water and cook until just tender.
- Drain pasta well and return to pan. Add the sauce to hot pasta and toss until sauce Is well coated. Serve in warmed pasta bowls.

- 3 medium red capsicums
- 3 tablespoons Cooking oil
- 1 Large sliced onion
- 2 cloves garlic, crushed
- ½ teaspoon chilli flakes or powder
- 125 ml thickened or pouring cream
- Salt and pepper(to taste)
- 2 tablespoons chopped fresh oregano
- 500 grams linguine or spaghetti
- Spinach
