Preparation Method :
- Cook the lasagne in boiling water, to which a few drops of oil have been added, for 10 to 20 minutes or until just tender. Drain on a clean tea towel. Preheat the oven to moderate.
- Spread one-quarter of the fresh tomato sauce over the bottom of a greased deep ovenproof dish. Cover with one-third of the lasagne, then one- third of the soft cheese.
- Sprinkle with the Parmesan cheese. Repeat the layers twice, and then spoon over the remaining sauce.
- To make the white sauce, melt the margarine in a pan, stir in the flour and cook for 2 minutes. Gradually stir in the milk and simmer until thickened. Season with salt, pepper and nutmeg then pour over the lasagne.
- Sprinkle over the remaining Parmesan cheese. Cook in the oven for 30 to 35 minutes until lightly browned and hot.
- Serve Hot.

- 500 grams whole meal lasagne
- Few drops of Cooking oil
- 1 liter fresh tomato sauce
- 500 grams Ricotta, curd or sieved cottage cheese
- 100 grams Parmesan cheese
Sauce
- 50 grams margarine
- 4 tablespoons plain whole meal flour
- 300 ml hot skimmed milk
- Salt
- Freshly ground black pepper
- Pinch of grated nutmeg
