FETTUCINE AL PESTO GENOVESE

Preparation Method :

  • Boil water in a pot and add a teaspoon of salt. Now cook the pasta in the boiling water for 5-8 minutes.
  • Heat a pan and roast the pine nuts for a minute.
  • In a food processor combine basil, olive oil, parmesan cheese, pine nuts, pecorino cheese, and garlic.
  • Blend it until smooth. Transfer it into a bowl.
  • Drain the pasta after reserving 1/2 cup of cooking water.
  • Add pasta to the bowl containing basil pesto sauce. Season it with salt and pepper as per the taste.
  • Mix it well. (Add the reserved pasta water if the prepared pasta is too dry)
  • Serve immediately.

INGREDIENTS

  • 300 grams fettuccine pasta
  • 150 grams fresh basil leaves (blanched)
  • 50 grams parmesan cheese (finely grated)
  • 25 grams pine nuts
  • 2 cloves garlic (finely chopped)
  • 30 ml extra-virgin olive oil
  • 2 tablespoons pecorino cheese (grated)
  • Salt to taste
  • Pepper to taste
  • Water for cooking pasta
