- Add pasta to a large pan of rapidly boiling water and cook until just tender. Drain and return to pan.
- While pasta is cooking, heat oil in a large heavy based deep pan. Add prosciutto and
- spring onion and cook, stir it occasionally, over medium heat for 5-7 minutes or until crisp.
- Trim stalks from spinach, roughly chop leaves and add them to pan.
- Stir in vinegar and sugar, cover and cook 1 more minute or until spinach has softened. Add salt and pepper.
- Add sauce to pasta ,toss until sauce Is well coated . Sprinkle with parmesan and
