- Cook fettuccine in boiling salted water. Drain
- Heat oil in a frying pan and sauté onions, garlic, courgettes and red pepper for about 3 - 5 minutes, keep stirring.
- Add the tomatoes, red chili and salt to taste and cook over a very low heat for another 10 minutes. Add beef and heat through.
- Spoon the sauce over the hot pasta and toss to combine. Serve hot.

- 1 red pepper, peeled and cut into strips
- 350 grams, fettuccine
- 450 grams, canned tomatoes or 2 tomatoes, peeled, seeded and chopped
- 1 tablespoon Cooking oil
- 2 onions, chopped
- 2 cloves garlic, crushed
- ½ teaspoon dried red chilli, crushed
- 500 grams corned beef, cut into shoestrings
- Salt to taste
