CREAMY PRAWNS WITH FETTUCCINE

Preparation Method :

  • Add fettuccine to a large pan of rapidly boiling water and cook until just tender. Drain well; return to pan.
  • While fettuccine is cooking, peel and devein prawns.
  • Add 1 red capsicum, seeded and sliced with 1 leek, dark green sectioned removed and white part cleaned thoroughly and sliced very finely.
  • Heat butter and oil in a frying pan. Add spring onion and garlic and stir over low heat 1 minute.
  • Add prawns, Cook for 2-3 minutes or until flesh changes colour.
  • Remove prawns from pan and set aside. (use scallops instead of prawns or a mixture of both)
  • Add cream to pan and bring to the boil. Reduce heat and simmer until sauce begins to thicken.
  • Return prawns to pan and add salt and pepper. Simmer for 1 minute.
  • Add prawns and sauce to fettuccine and toss. Serve in warmed pasta bowls. Sprinkle with parsley.

INGREDIENTS

  • 500 grams fettuccine
  • 500 grams raw prawns
  • 30 grams butter or margarine
  • 1 tablespoon Cooking oil
  • 6 spring onions, chopped
  • 1 clove garlic, crushed
  • 300 ml thickened or Pouring cream
  • salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley, for serving
