SAFFRON BOWS

Preparation Method :

  • Bring a large saucepan of water to a boil and cook the farfalle for 3 minutes if fresh or minutes if dried, or according to packet directions.
  • Heat the butter and cream in a small saucepan.
  • Add the saffron and gently bring to a simmer; the yellow of the saffron will explode into the cream and a fantastic subtle aroma will fill the kitchen.
  • Drain the pasta well, place in a warmed serving bowl, and pour over the saffron sauce. Season with salt and pepper and mix well.
  • Serve the Parmesan at the table and sprinkle just a little over each portion.

  • 400 grams farfalle
  • 4 tablespoons butter
  • 300 grams heavy cream
  • 1 teaspoon saffron threads
  • Salt and pepper
  • 300 grams freshly grated Parmesan cheese, to serve
