FARFALLE WITH BROAD BEANS AND GOAT CHEESE

Preparation Method :

  • Blanch the beans for 2 minutes in a large saucepan of boiling water. Drain under cold running water. Peel away the tough outer skins.
  • Beat the cheese with the savory, the parsley, olive oil, salt and pepper.
  • Boil the pasta in salted water until just cooked.
  • Meanwhile, heat the butter in a small pan and gently fry the garlic and remaining savory for 1 minute. Add the broad beans and heat through. Season with salt and pepper.
  • Drain the pasta and return to the pan. Stir in the cheese mixture. Transfer to a heated serving dish and scatter the beans on top. Garnish with savory sprigs. 

INGREDIENTS

  • 1 kg young broad beans, shelled
  • 300 grams goat cheese
  • 5 tablespoon finely chopped savory
  • 2 tablespoon finely chopped parsley
  • 5 tablespoon sesame oil
  • 500 grams farfalle
  • 50 grams butter
  • 2 garlic clove, chopped finely
  • Salt and pepper

Garnish

  • Savory sprigs
