VEGETARIAN PASTA

Preparation Method :

  • Heat oil in a pan or wok over medium heat, add onion, garlic and red pepper and cook, for about 2 - 3 minutes.
  • Add cauliflower and broccoli and cook, stirring, for 5 minutes.
  • Add mushrooms, toss to combine and pour in stock. Reduce heat, cover and cook for 5 minutes or until vegetables are tender.
  • Boil spaghetti in salted water until cooked. Drain and set aside to keep warm.
  • To Make Sauce: Place cottage cheese, milk, sour cream, Parmesan cheese and basil in a food processor or blender and process until smooth.
  • Add sauce to pasta, mix to combine and toss through vegetables. Serve immediately.

INGREDIENTS

  • 225 grams button mushrooms, sliced
  • 2 tablespoon chicken stock
  • 500 grams spaghetti  
  • 1 tablespoon of mild mustard.
  • 2 tablespoon Cooking oil
  • 1 onion, sliced
  • 2 cloves garlic, chopped
  • 1 red pepper, sliced
  • ½ head cauliflower, cut in florets
  • 1 head broccoli, cut in florets

Cheesy Sauce

  • 50 grams freshly grated Parmesan cheese
  • 2 tablespoon chopped fresh basil
  • 100 ml low fat milk
  • 225 grams cottage cheese
  • 100 ml sour cream
