Preparation Method :
- Heat oil in a pan or wok over medium heat, add onion, garlic and red pepper and cook, for about 2 - 3 minutes.
- Add cauliflower and broccoli and cook, stirring, for 5 minutes.
- Add mushrooms, toss to combine and pour in stock. Reduce heat, cover and cook for 5 minutes or until vegetables are tender.
- Boil spaghetti in salted water until cooked. Drain and set aside to keep warm.
- To Make Sauce: Place cottage cheese, milk, sour cream, Parmesan cheese and basil in a food processor or blender and process until smooth.
- Add sauce to pasta, mix to combine and toss through vegetables. Serve immediately.

- 225 grams button mushrooms, sliced
- 2 tablespoon chicken stock
- 500 grams spaghetti
- 1 tablespoon of mild mustard.
- 2 tablespoon Cooking oil
- 1 onion, sliced
- 2 cloves garlic, chopped
- 1 red pepper, sliced
- ½ head cauliflower, cut in florets
- 1 head broccoli, cut in florets
Cheesy Sauce
- 50 grams freshly grated Parmesan cheese
- 2 tablespoon chopped fresh basil
- 100 ml low fat milk
- 225 grams cottage cheese
- 100 ml sour cream
