LINGUINE WITH LEMON CREAMY SAUCE

Preparation Method :
- Add pasta to a large pan of rapidly boiling water until just tender. Drain and keep warm.
- While pasta is cooking, combine cream, chicken stock and lemon rind in a large frying pan. Bring to the boil, stir it occasionally.
- Reduce heat and simmer for 10 minutes. Season to taste with salt and pepper. Add cooked pasta and cook for another 3 minutes.
- Sprinkle with saffron threads; stir and serve immediately. Garnish with fine strips of lemon rind, if desired.

- 500 grams fresh linguine or spaghetti
- 250 ml thickened or pouring cream
- 200 ml chicken stock
- 15 grams grated lemon rind
- Salt and pepper, to taste
- ¼ teaspoon saffron threads or powder, optional
