LINGUINE WITH LEMON CREAMY SAUCE

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Add pasta to a large pan of rapidly boiling water until just tender. Drain and keep warm.
  • While pasta is cooking, combine cream, chicken stock and lemon rind in a large frying pan. Bring to the boil, stir it occasionally.
  • Reduce heat and simmer for 10 minutes. Season to taste with salt and pepper. Add cooked pasta and cook for another 3 minutes.
  • Sprinkle with saffron threads; stir and serve immediately. Garnish with fine strips of lemon rind, if desired.

INGREDIENTS

  • 500 grams fresh linguine or spaghetti 
  • 250 ml thickened or pouring cream 
  • 200 ml chicken stock
  • 15 grams grated lemon rind 
  • Salt and pepper, to taste 
  • ¼ teaspoon saffron threads or powder, optional
