HERBY VEGETABLE AND PASTA CHEESE

Preparation Method :

  • Steam the broccoli and cauliflower for 8-10 minutes, until tender.
  • Cook the pasta according to the instructions on the packet, until the pasta is tender, and then drain.
  • Meanwhile, make the cheese sauce. Melt the butter in a small heavy-based saucepan over a low heat.
  • Gradually add the flour, beating well to form a smooth paste.
  • Cook for 30 seconds, stirring constantly. Add the milk, a little at a time, whisking well to prevent any lumps forming, and then stir in the oregano.
  • Simmer for minutes until smooth and creamy, and then mix in the cheese. Stir until melted.
  • Add the cooked vegetables and pasta to the sauce and stir well.
  • Finely chop or mash the mixture, if desired.

INGREDIENTS

  • 2 broccoli florets cut into small florets
  • 2 cauliflower florets cut into small florets
  • 50 grams small penne or farfalle pasta

Cheese sauce

  • 1 tablespoon unsalted butter or margarine
  • ½ tablespoon plain flour
  • 150 ml full cream milk
  • ½ teaspoon dried oregano
  • 25 grams Cheddar cheese, grated
