BAKED SPAGHETTI FRITTATA

Preparation Method :

  • Preheat oven to moderate 180°C. Grease a 23 cm flan dish.
  • Melt butter in frying pan. Add mushrooms; cook over low heat 5 minutes.
  • Add capsicum cook 1 minute. Stir in ham and peas. Remove pan from heat; allow mixture to cool slightly.
  • In a small bowl, whisk eggs, cream, salt and pepper. Add spaghetti, parsley and mushroom mixture to bowl and stir. Pour into prepared dish and sprinkle with parmesan cheese. Bake for atleast 25 minutes.
  • Serve with char-grilled vegetables and leafy salad greens.

INGREDIENTS

  • 25 grams butter or margarine
  • 150 grams mushrooms, sliced
  • 1 capsicum, seeded and chopped
  • 125 grams ham, sliced
  • 120 grams frozen peas
  • 6 eggs
  • 300 ml thickened or pouring cream or milk 
  • Salt and freshly ground black pepper, to taste 
  • 100 grams spaghetti, cooked and chopped
  • 2 tablespoons chopped fresh parsley 
  • 50 grams freshly grated parmesan cheese
