BAKED FETTUCCINE

Preparation Method :

  • Preheat oven to moderate 180°C.
  • Add fettuccine to a large pan of rapidly boiling water and cook until just tender. Drain well and set aside.
  • While pasta is cooking, melt butter in a large pan. Add onion and stir over low heat until onion is tender.
  • Add fettuccine , sour cream to pan and toss well. Simmer, stirring, until pasta is well coated.
  • Add cream, nutmeg, ¼ cup parmesan, salt and pepper; stir.
  • Pour into a greased casserole dish. Sprinkle with combined mozzarella and remaining parmesan. Bake for 20 minutes or until cheese is softened and golden.

INGREDIENTS

  • 500 grams spinach fettuccine 
  • 60 grams butter or margarine 
  • 1 onion, finely chopped 
  • 300 ml carton sour cream 
  • 250 ml thickened or pouring cream 
  • ¼ teaspoon ground nutmeg
  • 100 grams freshly grated parmesan cheese 
  • Salt and freshly ground black pepper, to taste 
  • 100 grams freshly grated mozzarella cheese
