THAI FRIED NOODLES

Preparation Method :

  • Heat 1 tablespoon of the oil in a wok or large pan. Add the garlic and fry until golden. Stir in the prawns and cook for about a minute or until pink. Remove and set aside.
  • Heat 1 tablespoon of oil in another pan. Add the eggs, tilt and stir to scramble and break the egg into small pieces. Remove and set aside with the prawns.
  • Reheat the pan with remaining oil. When hot add the dried shrimps, pickled radish, beancurd and dried chillies. Stir-fry and add the soaked noodles and stir-fry again for few more minutes.
  • Add the garlic chives, half the bean sprouts and half the peanuts.
  • Adjust seasoning with the granulated sugar, soy sauce, fish sauce and tamarind juice. Mix well and cook until the noodles are completely heated through.
  • Mix the prawn and the scrambled egg with the noodles. Garnish with the rest of the bean sprouts, peanuts, coriander leaves and serve.

INGREDIENTS

  • 220 grams bean sprouts  
  • 14 - 16 raw jumbo shrimp, peeled, tails left intact and deveined
  • 3 tablespoon Cooking oil
  • 1 tablespoon chopped garlic
  • 350 grams rice noodles, soaked in warm water and drained
  • 2 eggs lightly beaten
  • 2 tablespoon dried shrimps, rinsed
  •  2 tablespoon pickled white radish
  • 100 grams garlic chives, cut into medium lengths
  • 45 grams fried beancurd, chopped
  • ½ teaspoon dried chilli flakes
  • 50 grams roasted peanuts, coarsely ground
  • 1 tablespoon dark soy sauce
  • 2 tablespoon fish sauce
  • A pinch of granulated sugar
  • 2 tablespoon tamarind juice
  • Fresh coriander leaves, to garnish
