TERIYAKI SALMON WITH NOODLES

Preparation Method :
- First, make the teriyaki sauce. Put the mirin or sherry in a saucepan, bring to the boil and simmer for 2 minutes or until reduced by half. Add the soy sauce and stock. Remove from the heat.
- Preheat the grill to very hot, and line the grill pan with foil. Arrange the salmon fillets in the pan and brush with the teriyaki sauce. Grill for 5 minutes on each side, basting often with the sauce.
- Meanwhile, cook the noodles in plenty of boiling water for 5 minutes or according to packet instructions. Drain and stir in the sesame oil, chives and spring onions.
- Serve the salmon on a bed of piping hot noodles, accompanied by any remaining teriyaki sauce.

- 250 grams medium egg noodles
- 4 tablespoon sesame oil
- 4 tablespoon finely chopped fresh chives
- 5 spring onions, finely chopped
